

All ready for work! I had the kitchen to myself tonight with some occasional help from the bartender serving pizza, 14 of them all in a two hour span...may not seem like a lot but we make them from scratch starting with the dough, so I mixed up 4 batches of dough during the course of the evening too. One order had 7...the oven can fit 6 if needed but the edges burn sometimes so I came up with a strategy: I prepped the cottage bacon, pepperoni and plain 3 cheese pizza first as they all have red sauce, then the Rueben and margarita pizzas which have special sauces. Cottage bacon and Rueben take a bit longer to bake so they went first then the rest went in as soon as there was room without crowding. All came out close together just as I hoped!
