Kale doesn’t love you back

To start this topic off, I wanted to get one thing straight.

Plants are alive.

If you dont believe that plants are alive, then this post isn’t for you! Carry on!

But if you understand that plants are alive, we can have a discussion :)

Long story short: plants have evolved to not get eaten.

Fruits, on the other hand, want to be eaten because they want to spread their seeds around the world so they can continue to repopulate.

When an animal eats a fruit, its seeds are spread out wherever the animal either spits, chews, or poops.

(Seeds can make it through the digestive tract which is also why I don't eat seeds. They’re SO hard to digest because their purpose to go make it to the soil!)

Plants, however, are stuck to the ground.
Plants had to evolve to somehow stay alive while being attached to the ground.

They did this by creating chemical compounds inside of their cells that wreak havoc on human digestion.

Here’s a list of how plants have chemically evolved to not get eaten - we call this “antinutrients” which basically cancel out any of the good that plants have to offer.

* Phytates- Present in grains and beans block zinc absorption
* Lectins- High in legumes and grains block mineral absorption
* Oxalates- Present in green leafy vegetables and nuts. Blocks calcium and iron. It’s why almond milk is not only bad for you, but Dairy is 2000 Times More Ethical Than Almond Milk but that’s for another time bb :D
* Goitrogens- Present in brassicas like broccoli block thyroid hormones
* Tannins- Found in tea, chocolate, and wine block iron absorption
* Polyphenols- found in ‘brightly colored plants’ block iron absorption (I actually use this to my advantage sometimes!)

“Okay but what if I cooked my plants?”

If you’re cooking out the harmful chemicals found in plants, you are also cooking out anything good left.

I have seen some people cook vegetable broths the same way you would make bone broth or beef broth. Simmer it for 24 hours and drink the broth without the vegetables to obtain the nutrients from the plants.

Or you could just eat animal-based and you wouldn’t have to go through all of that!

It’s important to note that the ways in which these plants have evolved to not get eaten impacts everyone differently.
If you’re metabolically ill, you might feel better taking them out like myself.

To put simply

I was very sick.

I cut out veggies and began to feel noticeably better

I'm STILL dealing with the damage that lectins and oxalates did to my organs.
And of course, it's not JUST veggies that made me sick but what I'm saying is it was def a problem to consume these chemicals in high amounts!

If veggies make you feel great, great! Eat up.

If something still isn’t right….look into going veggie-free for a week and see what happens!

The only veggie I've had in months is a raw carrot every day.

But I peel away the skin of the carrot and I leave the remains in vinegar to help break down the harmful chemicals in the carrot.
It helps with digestion and im still getting the benefits from the carrot!

Which is also kind of a hot take because our soil is SO depleted nowadays that the nutrient profiles of our produce is incredibly weak in comparison to 100 years ago.

If this post gets over 50 in tips, I will go into why i eat a raw carrot every day next week! The science is pretty nifty.
