

Hello everyone, here's a recipe I threw together on Friday 🥣 It's fast, for when you have less than 20 minutes total including prep and dish because it's only gathering materials. No chopping, less dishes. You can do as many eggs as you want, but I realized this comes out pretty fluffy on its own.
Egg frittata - Very short cook time
• Heat pan over medium with a teaspoon of high heat tolerant oil, fat, or butter and a few ouncescof water, cover.
• Cook raw spinach handful until steamed through and water is mostly evaporated, a couple mins. *
• Add egg, scramble around, add pepper, onion powder, other veggie or mushroom powder, and cook covered until mixture is firm enough for flipping.
• Flip, cover, and remove from heat, and salt to your preference.
• Top with additional sauces if desired (I used Melinda's) texture should be very light because of the steam.
*For less oxylates, you can dunk the spinach in some hot water to rinse following cooking and return to pan.
• Please practice proper hand and station sanitation before and after cooking, additionally, cook all foods until they're at the proper internal temperature to avoid foodborne illness. 😀
