I baked some vegan, gluten free cookies the other day. They actually tasted really good! I’ll leave the recipe below if you want to give them a try! Let me know how you like them if you do make them!
Pro tips:
You don’t have to space them out far as they don’t flatten out
You also can add more oats if the dough is too runny. It all depends on how big your bananas are. 😉🤭
Here’s the recipe and instructions:
2 cups (or more) quick oats
1 cup spelt flour
Around 1 teaspoon baking powder
Mix together

3-4 bananas (more bananas, more soft) smushed with a fork
Around 3/4 cup coconut sugar
1 tablespoon coconut oil. I use virgin oil.
Mix them together

Mix both mixtures together and add semisweet chocolate chips or dried fruits
Preheat the oven at 365F
Shape the cookies and bake for 12-15 min

I know what you’re thinking, that’s not Cara. No. It isn’t. But, it is one of the highlights of my recent trip. I swam with these turtles daily. They’re so peaceful in their natural habitat. They weren’t afraid to come right up to me too. They were very gentle little creatures. ❤️🐢
