Sharing one of my fav easy go-to lunch salads! So quick and easy and so delicious 😋
Ingredients:
• 1 bunch chopped kale (I mixed kale and romaine)
• ¼ cup fresh lemon juice
• ¼ cup olive oil
• 2 garlic cloves crushed
• Salt and pepper to taste
• red chili pepper flakes to taste
• ¼ – ½ cup grated Parmesan cheese
• ¼ cup toasted bread crumbs (optional)
• Grilled chicken, salmon, shrimp or protein of choice
Instructions:
• Whisk together lemon juice, lemon zest, olive oil, garlic, chili flakes, salt and pepper in small bowl
• Add kale, romaine, spinach, whatever you’re using to a large bowl
• Pour dressing over kale and add half of the cheese
• Toss to coat evenly
• Top with remaining cheese and breadcrumbs
• Add protein of choice and enjoy 😊
